WHISKY COCKTAIL: Penicillin Cocktail

You’ll need a blended Scotch for the base Scotch for this drink. Look for Famous Grouse, a well-known blend that’s easy to find and reasonably priced.


  • 60 ml blended Scotch
  • 25 ml fresh-squeezed lemon juice
  • 25 ml honey-ginger syrup
  • Ice cubes
  • 10 ml  Scotch Whisky
  • Lemon peel for garnish, optional

How To Make

Step 1: Using a wooden muddler or mixing spoon, muddle the fresh ginger in the bottom of a cocktail shaker until it is well mashed. Add the blended Scotch, lemon juice, and honey syrup, and fill shaker with ice. Shake until well chilled, about 20 seconds.

Step 2: Strain into an ice-filled rocks glass (you may wish to double-strain through a fine tea strainer to remove any flecks of ginger), and pour the Scotch over the back of a bar spoon so that it floats atop the drink.


For the honey syrup, combine equal parts honey and hot water and stir until well mixed. Let cool before using. You can also keep it refrigerated for up to 1 week before use.
